90 yr+ oak floor needs leveling

I'm in process of remodeling a kitchen. problem is there were so many rooms, and cubby holes with built in benches etc that the floor is not level. There are several chunks of floor cut out, loose boards, missing boards, a cistern that rose up under the floor that made a 3/4" height variance in one spot etc. What can we do to lay a new wood floor on top. we're really not sure how to go about remedying this mess to a beautiful new wood floor. hated to not to be able to use the original floor, but there's no way. any suggestions?
