Changing gas fireplace to a wood-burning fireplace

You have a lot of options actually. You could use vented gas logs, or vent free depending on your existing situation.

If you have a masonry (brick/stone) fireplace, you could add either. If it is a metal (pre-fab) fireplace, you should only consider using vented gas logs.
