Drywall over existing drywall?

Hello,

My entire family room and kitchen were covered with z-brick (fake brick) that was glued onto the drywall. We chipped off all the brick, but it has destroyed the drywall beneath it. In some parts there are small holes in the drywall, and in some parts the drywall is just torn, but it is impossible to get all of the adhesive from the brick off.

My question is: rather than tearing down all of the walls and re-building them, can we simply put a sheet of 1/4" or 3/8" drywall over the existing, damaged drywall? Will we need to glue the two layers of drywall together or skim coat the damaged walls in order to prevent air pockets from forming between the layers?

Any help would be appreciated!
