Is OIL BASE Polyurethane a Fire Hazard?

Greetings Paint Gurus!

Our range hood is built into wood framing. The bottom part (where the fan is) is all sheet metal, but the upper part is maple plywood which we'd like to polyurethane.

Our question is, is it safe to use oil-base polyurethane there? Once dried, is it any more of a fire hazard than water base polyurethane?
