Plywood for Interior Walls

I am adding an extension to my log house. I am adding a new bath and bedroom. The bedroom has three walls which are sheet rocked. The fourth wall has a very good grade of smooth plywood on it. Hortizonal sheets are on the bottom with vertical sheets on top. The ceilings are about 12 feet in the center. About four inch boards cover the seams. Well, I do not like it now. I tried natural stain on it and it looks cheap. A Santa Fe look would be fine. Should I try a dark stain? The floors are to be cherry and the ceilings are wood.
