Putting an opening in a wall

I made a "window" in the non-bearing wall between our kitchen and dining. The opening exposes the backsplash of the kitchen counter-top beyond. The ultimate goal of the project is to have the counter-top extend from the top of the backsplash into the dining room to create a serving area / breakfast bar.
Now for my problem(s): Most everything I had to cut into is plaster and lathe along with these beams that frame out the wall (the house is over 100 years old). I framed out my opening and will finish with drywall, but leave the sill exposed to mount the add-on counter-top. So how do I mount the new counter-top?
I will be glad to provide more information if it is needed to understand my project and dilemma.
