Rough Cedar Log Mantle

I just had a new rough cedar log mantle installed over my gas enclosed fireplace. The builder suggested that we oil it so it does not dry out(we live in Colordo). I used linseed oil and wiped it on with a rag. It looks great and I know it will take a few weeks for it to dry - but the odor (like wet hay) is still in the house - will this odor eventually go away. When should I expect the oil to be dry and it be safe to turn the fireplace back on? Is there anything I can do to help promote the drying and odor elimination.
