The shielded wire question is an issue. I realized this and tried my best to find a class 2 transformer which would have enabled me to use unshielded wire, but couldn't work it out.
The puck lights aren't mounted to j-boxes or round light boxes or anything, they just sort of clip into a 2 3/8" hole drilled into the cabinet under panel. I can't seem to figure a way to use junction boxes in the wall behind the cabinets and run shielded wire right up to the lights.
I need to think this through some more.
