framing

I am framing a resturant kitchen, accually putting up a new wall(42feet)in an existing kitchen. The kitchen has a height of 12 feet to the girters, but it also has a drop ceiling at 9 feet. I have a couple of questions. 1. Shouldn't I put in nailers between the 12 ft. studs? and if so where? and how many? 2. Being that the drop ceiling is at 9 ft. and is 60 ft. x 50 ft., the most logical way to build this wall would be piece by piece right?
