hot water tank

Hi.
Iwant to remove a sink in my shop,can turn off the cold water supply,but cannot find anywhere to turn off the hot water supply.
Therefor my question is can i turn off the hot water cylinder then turn off the cold water supply,then run the hot taps to empty the system,then remove the sink,cap off the pipes,then turn cold water supply back on,finally turning back on the hot water cylinder.
