I'd like to install some lighting in the false ceiliing of my family room. It's a big room so I'd like to have 2 zones. 1 of the zones will encompass the home theater system so I'd like to have it on a dimmer and be able to use my remote control to manage it, as well as having a normal wall control. I plan on having an electrician run the lines.

I prefer the look of recessed lighting over track but I'm not sure which will be the better system. What is cheaper? What is easier for me to install myself?

As a general rule, the track lighting is easier and less expensive. There are some track systems that can get quite expensive though,

You can do much more with track lights. If you use recessed lighting, you give up your options with regard to changing the location and character of the light in the room after installation.
