soil around the foundation (how high?)

Hello...
I just bought a house from someone who had a really large and bored dog. There are alot of holes dug around the foundation. I am going to replace the soil. Does anyone know what kind of soil and how many inches above or below the foundation the soil should be? I plan on sloping the soil also.I live in texas so, of course, its hot!

the ground must fall away from the foundation at least 6 inches within the first 10 feet around the perimeter of the house. http://www.askthebuilder.com/B67_Tips_on_Foundation_Soil_Grade_Around_Houses.shtml

You don't want the soil to go up to your siding because of termites. I guess we need to find another website for that distance.
