What type of "paste" or "caulk" would fix where there are splits where the walls meet the ceiling? Or Can you put strips of decorative wood over them to make it look better?

Often a silcionized latex caulk will do the trick presuming the cracks are from seasonal truss lift.
So will the installation of crown molding but the trick here is to fasten it only to the ceiling so it can rise and lower unfettered against the wall.
If you have cracks all the time and not just seasonally, or if your cracks a getting bigger, you may have a serious structural problem.
