I have searched the internet for hours and can't find anything on finishing drywall around tub and/or shower enclosures. I am talking about where the drywall overlaps the flange on the enclosure and how to finish that crack between the drywall and the fiberglass.

Nothing special here. Drywall is finished just as it would be anywhere else except that you should be using MR (moisture resistant) drywall and might consider using a setting type joint compound more resistant to water.

The joint between the drywall and fiberglass is caulked with a silicone or siliconized caulk usually after painting.
