My husband and I would like to remodel our home. However, who should I consult about whether or not we should just demolish and start over. I'd like to change the whole footprint of the home.

WOW! I hope this is not a casual question!
Have you considered moving? I do not pose the question lightly: Moving is one of the most stressful things you can do--to yourself, marriage, family. Been through that one myself (moving)--yet again--lately.
Having been through a couple of major remodels as well--those are very stressful, very expensive, very time consuming, very disruptive. Lots of impact on your life.
Starting over? Add: where to live in the meantime, more time, more money, more decisions, more stress. And if you're lucky enough that money isn't an issue, you still have the other issues...
As to who to consult...an architect, perhaps. But...do you really wanna go there...
