Are there any problems with doing this? I would guess that maybe the fridge may have to work a little harder when the stove is on? but is there a minimum distance or anything?

Considering that a range is only used 1-2 hours a day and that most new models use a forced air condenser (fan by the compressor) which draws air from the floor area anyway, I don't think there should be much (if any) problem.
It should be kept at least 1/2 inch away from surrounding surfaces on all sides but read the owner's manual for their recommendations.
