My GE wall oven (circa 1956 I think), is breaking down and I need to consider replacing it (the broiler works sporadically, the door cannot be propped slightly open, the lower element seems to have fried and won't come on, the indicator lights are dead, there is no interior light, the timer has never worked since I bought the house, etc). However, mthis current oven is tiny and I hate the fact I cannot get two small cookie sheets simultaneously in it. It measures 26" wide x 32" high on the outside (I forget the inside dimension) and sits in a cabinet that is just over 30" wide with cupboards above and below it. My question is this, I would like a slightly wider oven, but how much clearance should I have on both sides of the oven? I know the cutout size is generally smaller than the actual width of the exterior of the oven, but is it safe to buy an oven that would barely fit into the cabinet, and would have an exterior that would seem to go completely across the face of the cabinet, or should I have a few inches of wood showing on either side of the oven?

I do not believe any additional clearance is needed other than the minimum cutout opening described in the installation instructions and enough extra room on the outside (~½") so the door doesn't rub against anything while opening and closing.

But any such requirement should be stated in the installation instructions. Check the installation instructions for the product before purchasing the new oven and don't make any final cabinet preparations until you have the appliance in hand. Specifications are usually "subject to change without notice".

If you were planning on installing a 30" wide oven there, it is likely going to be a tight fit... if possible at all! You can expect to need a cutout of about 28½" wide. If the "cabinet" is made with 2x4 studs, you're only going to have about 26" (30" - 2" x 2) to fit it into. The widest oven that will likely fit comfortably would be a 27" wide model (see the following link) which only requires ~24½" wide cutout.

The oven cabinet is not made with 2x4s. It has very thin plywood on either side and then some bracing at the corners, as far as I can tell (at least, that's what the cupboards above and below it seem to have).

The oven cabinet is more or less freestanding (there is a hall on the left side, and the area to the right is a counter so the part the oven would go in is above that). So I think I have clearance, I just was not sure if there were codes that I needed to consider. I have seen photos of similar installations where the oven seems span the entire width of the cabinet and many ready-made oven cabinets seem to come in 30" widths for 30" ovens, so I hope I will be okay.

I really need a wider oven, and even a 27" oven does not have the interior space to bake cookies effectively.

I will most certainly take to heart your caution about waiting until the product is in my sweaty palms before I make any final cuts to the cabinet. I have heard horror stories.
