The door gaskets on our side-by-side refrigerator & freezer doors are HOT. Is this dangerous? What causes this? Do we need to replace the appliance?

They are likely being heated by the cabinet they're in contact with.
** Is this dangerous? **
As in catch fire? No, but there may be a problem in the refrigerator that needs looking into. Damage to other components of the appliance could result.
** What causes this? **
If the front perimeter of the refrigerator cabinet is getting hotter than usual, the fridge's condenser may be plugged or the condenser fan motor (if used on whatever make and model of refrigerator you have) may be inoperable.

It is an Admiral Signature Series, Model HMG50103. The front & side surfaces are cool to the touch. Only the door gaskets are hot.

Sorry but I don't see how that is possible. There is no source in the door that could generate any heat. It can only come from the cabinet.
Of course, the heat on the front surface of the cabinet (when there is) will be most prevalent when the compressor is running and the refrigerator actually working to cool the interior.
It wouldn't hurt (and is actually recommended to be done several times a year!) to *thoroughly* clean the condenser regardless. Making sure the fan motor is operational while there shouldn't be difficult either.
