Our brick chimney runs thru our kitchen that we are remodeling. We want to leave it exposed for the look, but how do we go about restoring it? My husband was thinking either sandblasting or pressure washing. But I don't want pressure washing in the house! What do we do?

Sandblasting would be the better choice. A dust tent will contain most of the mess. Chemical treatments are just a messy as pressure washing.
