EASY, if you have the money.

Granite and corian, and the like are something to consider. However, as for the stain resistant requirement, I'd talk to the Fabricator about that because, if the material is pourous at all, SOMETHING is bound to get in those cracks and be 'tough' to remove (hence, the possible 'illusion' that there is a stain.)
