I'd like to try installing a pedestal sink myself and I'm not sure about the drain. It's an old steel drum trap running through the floor. If I replace it with something better looking, how do I remove it and how do I join the new with the old?

I would probably leave it alone, as the pedestal will cover it all anyway. I had a similar problem. I replaced it with pvc joined together with a rubber sleeve with the tightening bands attached. This allows for small differences in alignment from the old to the new. If you base pedestal is large enough and will hide everything-I wouldn't touch it.
