I'm installing a three compartment kitchen sink in a friends new sushi joint. My question is, do the the three 1 1/2 tail pieces have to join into a 2" connecting drain beneath the sink before it hits the P-Trap? Or is a 1 1/2" drain fine. I'm sure people will say it has to be 2" because if there is one thing I'v learned in plumbing, if it feels wrong, it probably is

I personally would check the architectural drawings as this job should be filed and about the P trap are you positive you do not need a grease trap sized to the total L x W x H of this sink?
Also many decent codes would require an indirect waste where food handling comes to play.
Which code are you using and what did the HJA inspector say?
Some localities not only require piping using the building code they also require the department of health codes to comply
Just answering pipe size would not be in your best interests.

I don't know where you are located but you will probably have to provide an air gap between the drain outlets and a floor sink so that there is no possibility of the wastewater backing up into the sink causing contamination. I would be interested if anyone knows a site or has plumbing diagrams showing these conditions.
