I've had this hot water tank for maybe 2 years. I always kept it at "C" so I could take a shower, do laundry, and the dishes. The pilot light has never stayed lit for more than a month at a time since I had the tank installed. Now the pilot will not stay on long enough to heat a tank of water if I put the dial above "A". What could be wrong??

Next check the water temperature controll unit and see if it is one of the 88,000 or more that has been recalled due to soot build-up problems (even if a Natural gas fired - some of these were set up with a convertable temperature control):

Note: Just because you might have purchased your WH about 2 years ago, it could have been manufacturered months, years earlier. Also AO Smith used purchased controls - yours may have been put together with the recalled temperature control.
Therefore stating the date of installation is of no help - you need the entire model number and serial number (includes the date code) to check - also the temperature control information (the second link includes diagram of where you will find this information).
Check this out first before you start other diagnostics.
Then regarding the other list - I'd add flue baffle issues to the mix.
