My attic ladder is in a tight space in a hall-way with only around an inch between it and one of the walls. How can trim be put around the attic ladder hatch and the corner of the wall? Do they make trim that small?

Typically you would use casing that matches your doors & windows and scribe it to fit...
but, in your case (pun intended) I'd subscribe to select the small 1 1/8 bevel case and scribe that to fit, that way you'll keep the air space on the back of the trim.
