I am remodeling my kitchen. Formerly it had a separate cooktop and built in dual ovens. I am changing it to a single stove/oven range. There are separate 240 power runs of with 30amp breakers going to each the cooktop and built in ovens. The range I would like to install is rated for 50amps. There is not a 50amp breaker in my panel to use. Both 240 runs are accessible with some difficulty from the basement below the kitchen. I believe (and will verify) that #8 copper wire is used on the existing runs.

Any suggestions

The existing #8 wire, if they are cables such as "sheathed electrical cable", and the conductors are copper, are only good for 40 amps.

Also, there is a good chance that the existing cables might not have an equipment ground. This was a common, code permitted practice in years gone by. It is no longer permitted.

I suggest installing a new 6-3 with ground cable, a new 50 amp breaker and a 50 amp 4 wire receptacle.
