Bear with me please.

Why would anyone install a double poll 30 amp breaker for "electric stove"? Would not a 30 amp single suffice? Why would anyone install a 40 amp double for central AC unit? What type of electrical component/appliance would need even a 30 double poll? or even a 20 double?

There are two common voltages used in homes. The first requires 120 volts which is supplied by a singlee pole breaker. The second is a 240 volt appliance (range, oven, a/c, electric dryer, well pumps) These are usually heavy duty appliances requiring more power.

Additionally, the higher rated breakers are there for the more power needed for these devices.

Simple explanation.

The heavy appliances 240 volt are the ones that require the two-pole breakers.
