our old dryer has a 3 wire cord and the plug in is a 3 prong plug. The new GE dryer is a 4 wire cord and a 4 prong plug. Can I use the 3 wire cord on the 4 wire dryer?If so which wire do I leave out?

Dryers do not come with cordsets and either the 3 wire or 4 wire can be installed.
If this is the a NEW new dryer then the store installed the wrong cordset. Get them to fix it.
A 3 wire cordset consists of the 2 hots and neutral. It does not have a ground.
The cordset is connected to the hot and neutral terminals on the dryer. And jumper or strap connects between the case (ground) and the neutral terminal.
Get the dryer instructions for the details of where that jumper or strap goes.
