Any good ideas to get the outlets & switches off the backsplash so we don't have to cut all into the new tiles?

It's not really a good idea to move them; this location is where they belong. They are used mostly for appliances on the counter, and moving them elsewhere will just make your kitchen less convenient.

Easier for you the one time you remodel; harder for the kitchen users for years to come. Please reconsider.

You mentioned tile. Sometimes it's possible to arrange it so that the boxes are right where a full tile would be (sometimes just requires adding a short piece of 2x4 to the stud to move them out a bit). Then you can just skip that tile, and not have to do the tricky tile cutting. If necessary, replace the standard cover plate with an enlarged one, to cover over a whole tile space.
