We are renovating an old house and there is peeling and chipping paint on some of the walls, trim and doors (all interior). Do we chip away the paint and then have an indentation where the paint was? Do we fill in the indentation with drywall compound (even though some of the walls are plaster) or something else? We have seen some old homes which look so newly painted. How do we achieve that look?

The trim if you are going to paint it anyhow,go buy some pine trim (Very Inexpensive to buy) at like m enards or h ome depot very cheap and will be easy to cut to size just take down the old line it up with the new and make your cut,you can use a tablesaw,compound saw,or even a handsaw.This saves you the time and effort of sanding scraping and filling of the old stuff.
as far as the doors you should be able to sand out the rough edges to a nicely feather edge so it shouldnt be to noticeable.Or you can get wood bondo that fills nicely.
as far as the wall goes I would sand it out as best as can be otherwise maybe someone else can give you hints on this im not big into plaster.
