We're remodeling a house we just bought. We're going to have it repainted and recarpeted, both by professionals.

We've been told that we should schedule a delay between the painting and the carpeting, to allow the paint time to cure before the carpet guys come in (and theoretically scratch things). We've heard everything from 2 days to 2 weeks.

How long should we wait before having the carpets installed?

I would wait at least a week for the paint to cure some. You may have to touch a few spots but if the installers a good there will not be to much of this to do.

5-7 days is the perfect amount of time to wait

oh yeah, you definitely want a waiting period in between both of those. two days is not enough, i would go with more like a week.
