Does it matter if you use ceramic or porcelain in a commercial site? I is indoors and in a coffee shop so there is some spillage involved but no excessive water on floor.

Both will perform the same regarding spills but the porcelain may be a better choice for long term wear. Porcelain is overtaking clay ceramic as the tile of choice for many applications. If both are glazed they dont need to be sealed, just the grout.
