I'm laying granite tile on a peninsula countertop (on 3/4" plywood + 1/2" backerboard). As part of the job, I need to put edging (nosing) on both sides of a 3 foot wide peninsula countertop where I have less control over the overhang of the countertop tiles (using 3 full 12" tiles on the peninsula top - don't want to cut them). Any advice on what the minimum & maximum thinset thickness is for the edging pieces? What's too little & too much? 1/16" to 5/16"?
I'm using the same granite tile for the edging, with a 45 degree bevel to fit the top and edge pieces together.
Also, any advice on using something like Liquid Nails to stick on the edging rather than thinset?

I would prefer to see 2 layers of 3/4" ply then the 1/4" cement board. The cement board offers no structural strength to the countertop but it is a superior bonding surface.
On the edging I would put a strip of 1/4" Hardibacker cement board, screw it in as nailing will cause a narrow piece like that to split. Use white thinset, not mastic or glue from a tube. To support the tile temporarily, screw a ledger board to the underside of the counter overhang that the tile can rest on while the thinset dries overnight.
P.S.
A normal amount of thinset on the edge pieces will be fine (( about 1/8")
