I've found chunky peanut butter to be great because the mouse has to stay at the trap to eat it - raising the chances that he'll set it off.
A tip: tape the mousetrap inside a paper grocery bag, set on its side. That way, you can quickly look inside without having to stare at a dead mouse. It makes picking it up and throwing it away easier too.
