Joyce, I have a feeling that instead of stucco ceilings and walls you have lime plaster ceilings and walls. I do quite a bit of repair in homes that have the same problems that you do. Frankly, I suggest you get a plasterer to give you an estimate for repairs. One doesn't really fix the problem with a little spackle. The plaster on the walls have probably lost their "keys" and the wall is loose from the lath. Good luck.
