This is a major structural undertaking and generally requires permits. This ensures that the replacment foundation and footers meet code specifications for your particular house. You have not described anything about your house in terms of size, number of stories and materials of construction. Any suggestions on this board would require some basic idea of what you are dealing with.

Attempting to jack up a house requires specialized tools and extensive preparation. This is dangergous as you lift the house off the foundation and things begin to move and twist. There is extensive preparatory work for water lines, sewer, HVAC and electrical connections. The jacks must be placed on reinforced foundation slabs or steel plates. Talk to a foundation contractor before you begin to get an idea of professional approaches and costs.

Hope this helps, but I don't think you should jump head-long into this project this weekend digging under the house without some extensive planning and preparation and probably permits.
