Oil poly will

always create a slight yellowish tint. This is the down fall of oil poly, Water Poly will NOT do this, but takes many more coats to equal one coat of oil, but water will take re coating in two hours, where oil will take another coat in 24 hours.

I have found that minwax helmsman is not as yellowish as what you stated. Its more heavy duty that is for sure.

I like honey oak stain and for a darker stain that special walnut is nice.
