That's a good idea to use PVC. Even at $6/board foot it is cheaper than Corian! And it's easy to work.
The PVC needs to be painted. If you want the unpainted look, you can try Corian or Wilsonart or one of the other solid surface materials but it is hard to find in smaller pieces and expensive to buy a whole sheet.
