Don't try to cut food right on the countertop. It will be hard on your knives. I think you will get bacteria from meats, and other foods into the cement that you won't be able to get out. Why not use the stuff made for countertops? By the way, don't set glasses down too hard on your countertops.
Chris, that sounds like something stupid that I would do.
