HM: I would suggest furring strips of 1"x2" wood on all three walls, back and both ends. Then I would glue and nail a furring strip to the front edge of the shelf. This will help prevent sagging in the middle of the front of the board. It also covers the end grain of the plywood which is what I would recommend for the shelf. If you will be painting, or shelf paper covering the wood, regular pine plywood would be okay. ( 3/4 " thick ). But when I rebuilt my pantry, I never wanted to fool with shelf paper again, so I used furniture grade birch plywood, and stained and varnished it, and now it washes up real well, and looks good. Also with your 56" shelves, it would be a good practice to store the heaviest cans near the walls, and the lighter cereal boxes in the middle.
A hockey trophy or two would brighten the pantry.
