unless the plunger and seat washer have just rotted out with age, if so, the plunger is not expensive to buy a new one.

BUT, the answer to your question, on the end of the plunger is a screw. Tightening it one direction allows a restriction of the air being released and the door closes slower, opening the screw up more and more air releases and causes the slam. You need to tighten the screw.

Its really a trial and error program, loosen the screw one turn then try the door, do the same again and try again. You will find improvement at some stage.
