It would be very inexpensive to use a hygrometer to measure moisture in the insulation. If it is dry to the touch and the framing members have dried, I would not worry about it. Most fiberglass insulation uses a urea formalehyde binder that is very resistent to mold growth. Basically, if the rain that affected the insulation (especially in the attic or roof) can be shown to have been fully evaporated from the insulation, you don't have a leg to stand on to ask that the labor and materials for insulation be re-done. It would be a defect, to cover wet walls and seal in the moisture, but if insulation moisture levels are essentially at ambient levels, you have nothing to worry about.

The condition can be easily tested to determine if excess moisture is present. If it is, drywall installation should be deferred until the walls dry, or the insulation is replaced.
