Kevin, I've been pretty happy with the amber glow of oil based poly for this. I use Cabot's Oil Modified Floor Poly and have been real happy with that. One little tip is to buy a couple of empty paint cans at a home center and pour the poly into them when you get down in the can. This doesn't allow as much air space and the poly doesn't skin over as easily in the partially empty can. I guess that you could use an inert gas, also, but I haven't tried that. FWIW, I put a spit coat of shellac on about everything before applying stain or just poly.
