Removing tile and replacing kitchen sink.

I want to remove our kitchen sink and replace the tile with decorator tile if possible. I need to know the best way to remove tile with the least damage to surrounding tile? The builder installed sink is light metal with very little porcelein, I plan to buy a good quality sink that will probably weigh more, should I reinforce the area around the opening? I have never attempted the tile replacement, do you have any tips to make the job easier? Lastly, do you think that the garbage disposal should be replaced, it is ten years old.
