profit margin

I've been in new construction for some time. I'm now adding to remodeling to my service offerings. Some remodels are fairly easy to estimate, but some are so chopped up that I'm concerned about making a costly estimating mistake. Can someone give me advice on how to estimate these projects..? Do I use a cost plus method? (What margin is commonly accepted by customers) Or do I bid it sky high so I know I can't lose? (Again, what margin would work) Thanks for the advise.
