I too have been looking for plans for building brick or stone, with or with out mortar, barbecues, grills, smokers, etc.
I suggest that you try the article Backyard Brick Barbecue by Tim Carter Builder, Inc. at http://www.askbuild.com/cgi-bin. Look in the Column Archives and type in brick barbecue.
Also, it seems that brick and stone grills etc were very popular in the 1940's and 1950's. There are books on building the barbecues and smokers published by Sunset. Some are out of print but can be found in libraries etc. I also have an old Mary Marguerite McBride cook book that has three or four plans. Try finding ISBN 0-376-01042-8, a Sunset book, that seems popular. I am going to look at the Sunset website also. Others have recommended the Homeowners Guide to Working with Concrete, Brick and Stone, by the Portland Cement Association.
