Z Brick removal

I have z brick as the backsplash in my kitchen. I had thought of replacing the drywall but I don't see how I could do that without taking down the cabinets. If I were to chisel off the z brick, could I cover the rough mortor with new morter to make the surface even then apply ceramic tiles?
