In almost every case that I know of, the reasons to paint a ceiling is because it is so dirty or tired looking that it needs to be painted to refresh the surface look. Usually, you may as well paint the ceiling when you are repainting the walls. Personally, I feel that most ceilings should be white or off white.

OK, now why not to paint a ceiling. I have seen ceilings that were wood paneled. Just refreshing the wood, unless there was major damage would be plenty. Sound retarding tiles may be painted in most cases. If you have a plaster ceiling with special artistic effects like roundels, form work and appliques, I would have a trusted plaster craftsman review how to handle these. I have no idea about adobe.

Beyond some protection for drywall or plaster, there is no reason except an aesthetic one to paint walls or ceilings. Paint will not stop humidity exchange or nail pops. Paint and spackle will repair the damage from nail pops but paint alone will not stop future pops.
