You kinda lost me toward the end of your description .. but the joists you refer to are there to keep the walls from falling outward. So yes, they are necessary. But you could sister a 2x6 on them & add a few more for storage. (2x4s should be adequate..) Depending upon the spacing of the wall studs and the weight of the roof, be careful about how much weight you put up in storage ....
