I was recently put into the same position. I found it easiest to tape of the carpet right next to the baseboard. Of course, I have pretty stiff berber carpet and the tape held very close to the wall. It did not bleed onto the carpet at all. It was just a bit slower to tape of then taping off the walls. Go slow and you should be fine.
