air gap in granite counter/undermount sink

We are installing a granite counter and undermount sink in our new house & I was concern about the air gap. In our old house, when the drain is slightly plugged, water comes out the air gap and darined into the sink. In the new installation, if this were to happen, How can water drain into the sink if the airgap is mount on level granite (the sink is an undermount). any suggestions?
